It was sad to face the fact that the employees of this cafe are not familiar with the concept of customer focus. The policy of the establishment is determined by the words “arbitrariness”, “disrespect”, “manipulation”, which the employees who manage it, apparently, clearly memorized and made it their motto back in the 90s. This same period smacks of not only the manner in which the establishment is run, but also the interiors, the menu and the smug confidence that everything is fine. No guys, it's not good. Not good at all. You're living by the wrong dictionary. What you call self-respect is too much like a basic unwillingness to respect people and value their wishes. And calling your fellow citizens lovers of freebies is downright rudeness. Dear fellow employees! Get out of the basement, look around, your establishment is located on the territory of a large capital, and not at all in a small town lost in the vastness of a big country, where you can dictate your rules as a monopolist, not change anything about yourself for years, not change, not develop and look down on you. on naive clients. Maybe this will be news to you, but in Moscow the owner is not such a gentleman. Nowadays, in decent places, the master is the guest who is held on to. The very word “guest” should already tell you that a friendly attitude and the desire to turn his leisure time into a pleasant memory should be the norm for a self-respecting establishment. Efforts made to become more interesting and develop respect for the guest are a good investment. But, unfortunately, more effort is put into those same “cafes on Tverskaya”, to which your reaction, read between the lines, is about the same as that of a fat woman to a well-groomed, slender beauty (in the spirit of “all men are assholes, just give them a figure” ), although with some effort I could see the same one in my mirror. But the paths of self-improvement are always complex and energy-consuming; it is much easier, as a self-justification, to blame an innocent man for just wanting beauty. After all, Tverskaya or any other street in itself does NOT make the prices higher, the staff more polite, the interior more comfortable, and the food more refined. It's not a matter of location at all. And in the center there are many establishments in the same price range as your cafe, and the people work the same and for the same salary. And the staff of these institutions are not imported from Europe - they are trained themselves. The same etiquette - science is not very complicated, maybe you should show interest in it? And to be annoyed that a guest likes good service and has someone to cite as an example is, to say the least, stupid and strange. Train your staff, motivate them, charge them with a good mood, and then a guest, having visited your cafe, somewhere on Tverskaya will complain to someone “but in Medvedkovo on Shokalsky they served me better.” And your waiter will have well-deserved tea, and you will be happy. P.S. I will probably surprise you, but in Moscow restaurants do not charge rent for celebrations, this is not unique, you should not flaunt it)) Moreover, they do not charge a fee for pre-ordering a table, as your cafe does. And imposing red caviar, even though it brings a pretty penny to your department that sells fish, is essentially bad manners. Goodbye 90s. Nowadays different rules are in fashion.

Restaurant "Albatross" is a big project of restaurateur Alexander Orlov ("Tanuki", "Let's go", Eshak, etc.). At first glance, this is a slightly campy place, playing on the Soviet past. There is an open kitchen, equipped with such equipment that it is somehow even inconvenient to cook poorly: low-temperature ovens, a blast freezer, a PacoJet unit, sous vide, barbecue. And chef Daniil Shishigin uses the capabilities of the equipment to the fullest. Vinaigrette with salted milk mushrooms, sauerkraut and baked beets, served with a poached egg, that is, with a real poached egg, and not a plasticine likeness, and hot baked potatoes. Basturma turns out to be delicious pastrami - you never know where happiness will come from. Roast beef with radishes and Russian pesto is, of course, a more restrained dish, but no worse, and Russian pesto is a puree of all available greens whipped with vegetable oil, reminiscent of some kind of abstract, ideal vegetable garden. Beetroot soup is seasoned with horseradish and thinly sliced lightly salted cucumbers - the result is a dish of such flavor power that you could even mix a cocktail with vodka, some kind of Russian “Bloody Mary” with it. Hot dishes are also good - cabbage rolls with crayfish tails and cod, baked with a nostalgic sauce of sour cream and tomato. Perfect Pozharsky cutlets served with ketchup made naturally from eggplant. And this is not a figure of speech, but the truth is ketchup - “Heinz” should cry burning tears. And you can literally eat BBQ pork ribs with a spoon. Here you can also drink Russian - white Siberian, red krasnostop, Georgian - wine, moonshine, birch sap and kvass.
