Introduction

Ice cream- This is the most famous dessert in the whole world, the most favorite treat for any child. I don’t know about you, but it puts me in a good mood for the whole day! That's why I decided to learn everything about ice cream and try to make it at home.

The relevance of research . The composition of classic ice cream includes, first of all, milk, which means that ice cream contains about a hundred substances valuable for the body.

The question arises: Is ice cream good or bad? What is the exact composition of it? What types of ice cream are known?

Object of study

Subject of study : making ice cream at home.

Purpose of my research : study the variety of types of ice cream, its composition, based on what has been studied, find out whether it is possible to prepare ice cream at home.

Research objectives.

  1. Explore the history of ice cream.
  2. Find out what types of ice cream exist.
  3. Make ice cream at home.
  4. Find out interesting facts about ice cream.

Research hypothesis : I assume I can make ice cream at home.

Research methods : literature study, analysis, experiment, comparison.

1. The history of the origin of ice cream

For the first time, ice cream began to be prepared in those countries where hot and cold areas coexist. These are the southern, mountainous regions. The first ice cream was made in China more than five thousand years ago. The delicacy of rich nobles consisted of a mixture of snow and ice with pieces of fruit.

The first mention of ice cream in Russia dates back to Kievan Rus. Housewives served finely shaved frozen milk. In the villages on Maslenitsa they were treated to a mixture of frozen cottage cheese, sugar and raisins. The first machine for making ice cream appeared in Russia only in the nineteenth century

Our distant ancestors prepared the mixtures mentioned above (later with sugar, when it became more accessible) themselves or bought them and served them at “ cake"to the great joy of the children. In many villages, cottage cheese was mixed with sour cream, raisins and honey during Maslenitsa.

Then figurines of animals and birds were sculpted from the mixture. The products were displayed on the porch in the cold - here you have homemade ice cream.

Summer, sun and warmth, It's for sale to everyone We love to feast on them, Be careful, we'll chill your throat. You can't eat a lot of it So what are we talking about, friends? (Ice cream)

History of ice cream

There is no person who would not enjoy ice cream, but few people know where and when it first appeared.

Ice cream is a very ancient delicacy. It was invented by the Chinese back in the 2nd-3rd century BC. Only members of the imperial family and persons close to the emperor could try this treat. The recipes for the delicacy were kept a closely guarded secret and were declassified only in the 11th century BC.

Ice cream appeared in Russia during the reign of Catherine the Great. Imperial chefs attended special courses in France to master the skill of “proper mixing of milk masses.” Ice cream occupied a place of honor on the tables of the Russian nobility.

The ice cream that we know and consider as such appeared in the Soviet Union only in the 30s of the last century. Anastas Mikoyan brought equipment from America for the production of ice cream on an industrial scale.

Ice cream has no etiquette. It is eaten in winter and summer, in restaurants and small cafes, at home and on the street.

Ice cream- This is a chilled whipped emulsion from a mixture of milk or cream, sugar, sometimes eggs, often fruit juices, and various fruits. This is a product of high nutritional value, well absorbed by the body. The fattest ice cream - cream, its fat content is on average 12–15%. It is named after the French city of Plombières. Next - creamy, with a fat content of 8–10%, then - dairy, in which there is even less fat, only 2.8–3.5%. In fruit and berry ice cream And fruit ice There are no dairy fats, because they are made from fresh and frozen fruits and berries, from purees, natural juices, marmalades and jams.

Ice cream composition: natural milk, cream, milk powder, sugar, butter, vanillin, stabilizers – emulsifiers. Kinds: ice cream, chocolate, various popsicles, creme brulee, fruit and berry. Ice cream brands, which are sold in stores in the city of Nizhnevartovsk: “Ekzo”, “Inmarko”, “Iskrim”, “Plombir”, “33 Penguins”. Recommendations when choosing ice cream: Check the production date, shelf life, study the composition; good ice cream should not contain vegetable fats. The packaging must be intact and the ice cream must not be wrinkled.

The benefits and harms of ice cream

Everyone loves ice cream, adults and children. If a product is tasty, then there are immediately people who say that it is harmful.

What speaks in favor of eating ice cream?

1) Ice cream is made from milk. It contains all the useful substances that are in the “raw materials”. B vitamins (fight bad mood, improve sleep, skin and hair), vitamin A (necessary for good vision), vitamin D (helps the body absorb calcium), vitamin E (protects against early wrinkles) and minerals (iron, potassium , magnesium, sodium, phosphorus) necessary for our body.

2) Ice cream allows you to quickly restore energy.

3) Ice cream increases a person's immunity by hardening the throat.

What can be considered harmful from ice cream?

1) By consuming too much ice cream, you can gain excess weight.

2) Ice cream can cause headaches, because when eating it, due to a too rapid drop in body temperature, blood vessels narrow and blood flow in the brain decreases, and this causes pain.

I conducted a survey among 4th grade students at my school. Target: identifying the level of students' knowledge about ice cream. Questioning. 1) Do you like ice cream? (-yes, -no) 2) How often do you eat ice cream: A) once a day; B) once a week; C) once a month 3) What brands of ice cream do you like? 4) Do you know the composition of ice cream? (-yes, -no) 5) Have you tried making ice cream at home? (-yes, -no) 6) At what time of year do you eat more ice cream A) Spring - Summer; B) Autumn – Winter; C) Indifferent 7) Do you think ice cream is healthy? (-yes, -no) The results of the survey indicate that:

100% love ice cream

think ice cream is healthy

use: 47% - once a week; 34% - once a month; 19% -1 time per day

eat ice cream "Spring-Summer"

popular brands: fruit ice, "Tycoon", "USSR", "33penguins", "Bee"

49% made ice cream at home

know the composition of ice cream

The recipe for making homemade ice cream is very simple and is based on only two ingredients - cream and condensed milk. I took all the necessary products from the refrigerator.

Required Products:

  • Cream 33% fat - 500ml,
  • Condensed milk – 380g (1 can),
  • Vanilla sugar - 1g.
  • Cocoa powder – 2 tbsp.

For decoration:

  • Chocolate,
  • Walnuts,
  • Currant jam.

Let's start cooking

Step 1.

Step 2.

Pour chilled cream into a bowl.

Add vanilla sugar.

Step 3.

Add condensed milk.

Step 4.

Beat the mixture with a mixer until it reaches a thick consistency.

Divide the resulting mass into 2 parts:

Step 5.

Step 6.

Mix one part with cocoa powder - you get chocolate ice cream.

Place the chocolate ice cream in a glass and place in the freezer for 6 hours.

Step 7

Step 8

Place the second part in a plastic container and cover with a lid.

Place the container in the freezer for 6 hours.

Now 6 hours have passed, it’s time to take the ice cream out of the freezer, put it in bowls and decorate. I got 4 servings of ice cream.

Step 10

I sprinkled the second creamy ice cream with walnuts and currant jam.

Step 9

I decorated the first ice cream with chocolate chips (I grated the chocolate).

Step 11

The third ice cream turned out to be chocolate.

Step 12

I decorated the fourth ice cream with currant jam.

The result of the experiment was this delicious ice cream.

Bon appetit!

In the process of doing the work, I learned what ice cream is, the history of its appearance, varieties and types.

Based on the above, we can conclude that ice cream is good for humans. Experts believe that 100g of ice cream per week will not harm anyone.

The survey results showed that all students liked ice cream.

After studying the literature, I realized that you can make ice cream at home.

There were articles on Internet sites about making ice cream at home. I decided to make this ice cream because I only needed two products - cream and condensed milk, which did not require large expenses or equipment.

The hypothesis was confirmed. I can actually make ice cream at home. This ice cream can be prepared in 7 hours.

In the future, I plan to make ice cream using a different recipe and a different cooking technology.

Literature Study

  1. The history of ice cream

Ice cream is a chilled (frozen) dessert. It is made from dairy products such as cream, milk, butter with the addition of fillers, flavors and sugars.

Ice cream is a very ancient delicacy. The history of the invention of the most popular dessert goes back to the time of the most ancient civilizations of Asia: China and Mesopotamia. Ice cream was admired by Alexander the Great, Napoleon and George Washington, and several people patented it.

The history of ice cream is believed to date back more than 5,000 years.

As early as 3000 BC in rich houses China Desserts vaguely reminiscent of ice cream were served at the table - rich Chinese feasted on snow and ice mixed with pieces of oranges, lemons and pomegranate seeds. Recipes and storage methods were kept secret and were declassified only in the 11th century BC in the book “Shi-king” - a canonical collection of ancient songs.

Another ancient source describing the use of chilled juices during harvesting is the letters of Solomon, king of Israel. The ancient Arabs also adopted the tradition of eating ice cream. The famous ancient doctor also recommended ice cream for improving health. Hippocrates.

They treated us to ice creamthe greatest commander of antiquity, Alexander the Greatduring his campaigns in India and Persia. During his time, they came up with the idea of freezing berries in the snow. Slaves were sent to the mountains to collect snow, and special relay races were organized to prevent it from melting. By the way, it was his soldiers who came up with the idea of adding wine, honey and milk to water with fruit.

Europeans were introduced to ice cream at the beginning of the 14th century by a famous traveler. Marco Polo . The dish was first described in travel journals at the very beginning of the 14th century. A famous traveler, having visited China, fell in love with ice cream so much that upon returning to his homeland, he Italy – he immediately shared some recipes for its preparation with domestic chefs.

According to legend, Marco Polo brought from his trip to the East a recipe for a delicacy, for cooling which they used not only snow, but also saltpeter. And since then, a dish similar to sorbet was certainly present on the menu of aristocrats.

It was then that ice cream became the center of intrigue: the chefs kept the recipe a closely guarded secret, and for the uninitiated, its production was akin to a miracle.

Ice cream is made from milk and cream, which contain natural substances that calm the nervous system and stimulate the body's production of the “happiness hormone” - serotonin. It improves memory and improves mood.

  1. Types of ice cream.

According to the production method, ice cream is divided into soft and hardened . The temperature of soft ice cream is minus 5 degrees, it is delicate and cannot be stored for a long time.

Hardened factory ice cream is frozen to minus 20-25 degrees, becomes hard and does not melt for a long time. This ice cream can be stored for 6 months to a year.

There are four types of ice cream based on fat content:

  1. dairy (no more than 6% fat);
  2. butter (from 8% to 10% fat);
  3. ice cream (15%);
  4. fruit and berry (virtually no fat).

There are more than seven hundred types of ice cream on earth. Today, ice cream is prepared as a side dish for the main dish and comes in flavors like crab, cheese, celery, beans, dandelion and even onion.

Practical work

I started thinking, do my classmates love ice cream as much as I do? What types and varieties of ice cream do they prefer?

To find out their opinion, I invited the guys to answer the questionnaire.

  1. What kind of ice cream do you prefer?
  1. chocolate
  2. creamy (ice cream)
  3. fruit ice
  4. pistachio
  1. How often do you eat ice cream?
  1. only in summer
  2. few times a week
  3. ready to use every day.

18 of my classmates took part in the survey.

The guys answered the first question as follows:

33% (6 people) love chocolate ice cream

28% (5 people) – love fruit ice

22% (4 people) – prefer pistachio ice cream

17% (3 people) – prefer creamy ice cream

The answers to the second question were:

39% (7 people) – several times a week

33% (6 people) – only in summer

28% (5 people) are ready to eat ice cream at least every day

After analyzing the results of the questionnaire, I can conclude that my classmates are the same ice cream lovers as me, but their taste preferences turned out to be different. As they say: “there are no comrades according to taste and color.”

And if most of my classmates, like me, love chocolate ice cream and popsicles, then it was these types of ice cream that my mother and I decided to prepare at home.

For cookingchocolate ice creamAt home we needed:

  1. 3 egg yolks
  2. 1 tsp powdered sugar
  3. 150 gr. cream
  4. 300 gr. milk
  5. 200 gr. dark chocolate

Here are the preparations fruit ice I found it more interesting.

Berries in the amount of 500 grams are crushed in a blender, lemon juice in the amount of two teaspoons is added. A saucepan with water and one hundred grams of sugar is brought to a boil, then the water is cooled and the berry mass is added. The resulting mixture is poured into molds, cooled, and placed in the freezer to freeze.

Ice cream is ready! And, according to friends, it’s no worse than what we buy in stores!

Conclusion: to make ice cream at home, of course, you need certain conditions in the form of a set of certain ingredients, but most importantly, desire!

Conclusion

As a result of the work done, I can say that my hypothesis was confirmed. If you apply diligence and patience, and even if you attract your mother to help, then ice cream can be made at home and even of various types.

Interesting Facts

1. Ice cream products are regularly included in the Guinness Book of Records. For example, the largest ice cream snowman was built in Moscow. His height was about 2 meters, and his weight was up to 300 kilograms. It personified the power of Russia (the colors of the national flag) and was made of cream, blueberry and strawberry ice cream.

  1. Nowhere else on the planet will you be offered such a variety of ice cream than in Venezuela? Cafe "Coromoto" offers its visitors 709 varieties of ice cream.
  2. The New York restaurant Serendipity began serving a special dish that is “not for everyone” - ice cream at a price of 25 thousand dollars per serving. The menu of the New York restaurant Serendipity includes the most expensive ice cream in the world.

This business best registered as to work freely with large suppliers and buyers. Code OKVED - 10.52- “Ice cream production.” Next comes the choice of taxation system and registration with the Pension Fund.

You need to obtain permits from the SES and Rospotrebnadzor. To do this, you need to organize work in accordance with GOST 31457-2012(“Ice cream milk, cream and ice cream”), arrange the premises in accordance with the requirements SanPiN 2.3.4.551-96, provide contracts with sanitary and utility services (disinfection, garbage removal, etc.) A fire safety system must be installed at the plant.

Registration and permits require an investment of $1,000-$1,100.

Corporate identity development

You should start with Rospatent and the development of a corporate identity. This is the product name and packaging design by which your product will be recognized. The designer's work and trademark registration cost at least $900.

Room

The factory occupies an area of about 200 square meters, including all premises (production, utility and household premises, warehouse). Mandatory requirements:

  • Ceiling height 3.5 meters;
  • Electrical network 380V;
  • Water supply and sewerage;
  • Availability of access for transport.

You need to pay approximately 1500-1600 dollars per month for rent. Repairs will cost another $1,000.

Ice cream production technology

There are several manufacturing methods, but the future product in any case goes through a number of mandatory operations.

How it's done?

The technological process includes the following stages:

  1. The raw material mass is mixed and filtered;
  2. The mixture then undergoes pasteurization and homogenization;
  3. After this, it is cooled and sent for storage and “ripening”;
  4. The most important process is freezing. The mixture takes on a creamy appearance, cools, becomes saturated with air and increases in volume;
  5. After freezing, the ice cream is infused with flavoring additives (chocolate, nuts, jams, etc.);
  6. Packing. The almost finished product is dosed (for example, into cups, waffle cones);
  7. Hardening. This is short-term freezing in a hardening chamber with a low temperature: -25...-37 degrees. Advanced lines can simultaneously carry out packaging and hardening by combining the work of a conveyor, eskimo generator and extrusion equipment in one stage.
  8. Packing in corrugated boxes or cardboard boxes. After packaging, the goods are stored in refrigerators, ensuring a temperature of -20 degrees.

Common Technologies

Most often, the ice cream production line uses batch or continuous method. Portion-based is suitable for small volumes of products, but is inferior in efficiency and rational use of equipment, as well as in the quality of the finished product.

Continuous allows you to produce from 1250 kg of mixture per hour, requires qualified personnel, and is economical in energy consumption. Automated lines are used to eliminate errors and make the product of higher quality.

Ice cream production equipment

Focusing on small volumes (300-400 kg of product per shift), the plant needs to be equipped with:

  • Component mixer (about 5 thousand dollars);
  • Filter ($350-400);
  • Oil melter ($3000);
  • Homogenizer and pasteurizer (total cost approximately $7600-7800);
  • A container where the final product is infused and matured ($6000-6200);
  • Shut-off valves (three thousand dollars);
  • Pumps (about $3,000 for three pieces);
  • Freezer ($13-15 thousand);
  • Packing machine (8-9 thousand);
  • Refrigerated chamber for storing products ($1600-1800)

The best brands of equipment

Most inexpensive devices “produce” only one type of product. Buying a new line will cost 45-50 thousand dollars. A good selection of machines and ready-made lines is offered by:

  1. "Progress";
  2. MATRIX ENGINEERING SA;
  3. "Ice Bureau";
  4. Altezoro;
  5. "Master Milk"

The machines from the domestic company Progress have proven themselves to be excellent. Freezers can be purchased as part of the line, or you can find them separately, because this is the most important part of making a cold delicacy. The most popular manufacturers are American, Chinese and European:

  • Altezoro;
  • Nemox;
  • Innova;
  • Huangshi Dongbei Refrigeration CO, LTD;
  • Ocean Power;
  • Spaceman.

The best and recognized brands are Carpigiani, Taylor, GelMatic, Electro Freeze, Frigomat.

Refrigerators should be chosen from reliable foreign companies, like Polair and Liebherr, or domestic “Profkholod”, “Marikholodmash”, “Sever”.

Raw materials for ice cream production

Making ice cream based on natural milk is almost a thing of the past; now it is quite an expensive pleasure. High-quality products are made from animal fats. There should be as few additives in it as possible. Its cost is rather high, so it is unlikely to cope with the competition.

A standard set of components for a product in the mid-price category:

  1. Milk (skimmed, whole, whole milk powder, condensed);
  2. Dairy products (whey, cream, butter);
  3. Sugar and sweeteners (xylitol, sorbitol), vanillin;
  4. Vegetable fats;
  5. Emulsifiers and stabilizing additives (give the cold delicacy fluffiness and airiness). These are gelatin, pectin, xanthan gum, agar, etc.;
  6. Glaze and other flavorings (berries, nuts, seeds);
  7. Flavors;
  8. Citric (E 330) and malic (E 296) acid;
  9. Food colors (carotene, juices);

The ice cream production process means that to make a ton of product you will need approximately 9 thousand kilograms of raw materials. Dry mixes, toppings, glazes and other ingredients can be purchased from specialized companies: Ice Dream, Nord, Dolse Rosa, Spoom, SZRK.

Staff

To organize work in two shifts, you will need to hire at least 10-11 people. This is the manager, the head of the workshop, the sales manager, the technologist, four workers, two loaders, and a cleaner. We outsource accounting. The salary fund per month will be $4,000.

The food business requires all workers to have health certificates and go to work in uniform.

Costs and profits

Capital costs for opening an enterprise (documents, premises, equipment) will be 50 thousand dollars. Monthly costs (rent, wages, raw materials) will be 8-9 thousand. In two shifts, you can produce about 500 kg of goods at a wholesale price of 2-3 $ per kg. This is approximately $25,000 profit per month, net income – 17 thousand.

First you need to study the ice cream in detail and find potential buyers. This will allow you to quickly recoup your business and avoid idle equipment. The business is very promising and leaves room for expanding the range and increasing sales volumes.
