As is known under natural conditions in winter, as the water temperature drops, the growth of sturgeon slows down significantly; the optimal temperature is constantly maintained in the RAS, and the fish does not stop growing. If in nature the sturgeon reaches sexual maturity at about the 15th year, then in a recirculation system it is already at 6–7 years. Starting from the age of 7, in a sturgeon farm, you can already receive caviar for fry production and sale.
